Instructions:

1. Put chicken wings and pig bones in a pot and bring to a boil, turn off heat then drain out blood water, set aside meat ingredients, wash the pot then pour water and resume boiling.

2. On a separate wok, heat vegetable oil to stir-fry ginger, garlic, bean paste, cassia, fennel, star anise, chili pepper, and peppercorn.

3. Sprinkle salt on the soup base and simmer for 20 minutes.

4. Pour sesame oil, add scallions, garlic, chicken essence, and salt into separate saucers as dips.

5. Serve the Thai spicy chicken hot pot.
